pogačice

(Translation, Yugoslavia)

A specialty - pastry made out of dozens of layers of philo-like dough, cookie-cut in circles or squares (though pogačice are round, the square ones are called paštete, for no good ethymo-logical reason). Sometimes with droždine (v. čvarci), or tallow, or most often cheese. Actually, most often with nothing at all, maybe yogurt.

Her father was making them, when he was working in LebarProm. His right palm had a serious calus from pressing that tin cilinder into the dough, night after night.
