(Translation, Yugoslavia)

A winter dish here, basically aspic. The pig's ears, tails and feet are boiled over and over until the meet falls off the bones. Then the bones are taken out, and the rest is poured into larger pots (glass, ceramic, porcelain) to cool off and congeal. Traditionally made in winter, but we got fridges - and still make it once or twice every winter. Takes a carrot, a root of parsley (thrown away after cooking), some pepper corn and garlic, and salt. Some smoked meat is usually added for extra taste.

Pronounced pihh-te-yeh. The hh is my desperate attempt to convey the instruction to actually read the bloody aitch, which seems practically unfeasible in english - no matter what you do, it doesn't get read as a h.
