Barbecue thing, served in various forms all over Balkans. Take half and half of beef and pork and knead it together with ground pepper and salt, then extrude through a 20mm funnel (or just a bottleneck) into pieces about 40-50mm long, and put them on the barbecue.
Sounds simple, but mine never got to be as good as real chef's - not juicy enough. maybe I need a stronger fire.
p.s. nowadays they're bigger, there are different mixes, and I got them right - learned to make a stronger fire. The above was written before 2013 or so, when I started trying out tricks more seriously. It needs at least 230C, and then do it quick.
I don't care that it says 2017 below, those dates are the best I could catch, could do better, but that would require unzipping old tables, going through them, generating postgres scripts to update, altogether an unnecessary fucking around.
